Cooking with a Purpose in Koh Lanta

Time for Lime, established in 2003 by Junie Kovacs, is Koh Lanta’s original Thai cooking school. Over the past two decades, we have taught authentic Thai cooking to more than 25,000 students.

Our classes are known for our skilled master chefs, vibrant flavors, playful techniques, and a bit of friendly spice. Classes cater to various dietary preferences, including vegan, vegetarian, and pescatarian options.

The proceeds from Time for Lime support Lanta Animal Welfare, making each class an experience with a cause.

About Junie Kovacs, Founder

Junie Kovacs brings a multicultural twist to Thai cooking, blending her California roots and Norwegian upbringing with a love for cooking, food, flavors, and animals. Junie moved to Koh Lanta, Thailand, to follow her passions. In 2003, she founded Time for Lime, the island’s first Thai cooking school, where she developed our immersive, fun, and hands-on approach that brings out the inner chef in everyone.

Junie has shared her expertise in Thai cuisine with a global audience, including publishing a Norwegian cookbook, Tid til Thai (Time for Lime), introducing readers to her favorite Thai recipes and techniques.

In 2005, Junie also established Lanta Animal Welfare, a non-profit dedicated to helping rescue animals on the island and in the region.

About Ronnakit Noi (Noi), Master Chef

Noi’s connection to food and its power to nourish began early. Growing up in a family with limited resources, he chose at age 11 to move to a temple, where he continued his love for cooking by preparing meals for fellow monks.

For Noi, food is more than nourishment; it’s a symbol of care and community. He believes true impact comes from teaching people how to cook and sustain themselves.

In 2015, Noi joined Time for Lime, where his university communication skills found a perfect outlet. He not only teaches genuine Thai cooking but also embraces Lanta Animal Welfare’s mission, contributing to its impact on the island. Noi continues to show how food can bring people together, inspire change, and make the world a better place, one dish at a time.
